To make traditional jangjorim, thinly sliced beef is simmered in a mixture of soy sauce, water, garlic, sugar, and sometimes other ingredients like chili peppers. The beef is cooked until it becomes tender and absorbs the rich flavors of the marinade. Once cooked, the beef is typically sliced into bite-sized pieces and served cold or at room temperature.

Today’s recipe is a twist on the original. We will make jangjorim with salmon as our protein source. Ingredients
  

  • 1.5 lbs (24 oz) fresh salmon with skin off
  • 4 cups of water
  • 6 Tbsp of soy sauce
  • 6 Tbsp of sweetner We used monk fruit. You may use your sweetener of choice: brown sugar, white sugar, Splenda.
  • 4 Tbsp of mirin
  • 1 tsp of wasabi
  • 1 Tbsp of minced garlic
  • 1/2 Tbsp of gochugaru Korean pepper powder
  • 2 peeled potatoes
  • 1/4 white onion sliced
  • 2 green onion stems thinly chopped
  • pepper (for seasoning)

Instructions
 

  • Peel the potatoes and cut them into 1 inch (2.54 cm) thick cube-sized pieces. Slice the white onion and green onion.

  • In a mixing bowl, combine 4 cups of water, 6 tablespoons of soy sauce, 6 tablespoons of sweetener, 4 tablespoons of mirin, and 1/2 tablespoon of wasabi paste. Stir the mixture until all the ingredients are well combined.
  • Pour the sauce into a pot and add the white onion and potatoes. Heat to medium-high.

  • Once the sauce is bubbling, add the salmon. Stir occasionally.

  • Once simmering, add 1 Tbsp of minced garlic and 1/2 Tbsp of gochugaru (Korean chili flakes)

  • Once potatoes are cooked and fork tender, reduce the heat to low and add green onion.

  • Braise until sauce becomes thick. Then remove from heat and enjoy!
